GARDEN CHOPPED SALAD! From Market to Table


I love Farmers open market, especially in the summer! I can’t get enough of all the fresh fruits and vegetables that are available especially the tomatoes, corn, strawberries, and peaches. Fresh herbs are available in abundance, I enhance all of my dishes with them for the subtle added flavor it lends to dishes. Using fresh herbs such as basil, mint, chives, dill, Italian parsley helps bring out all the earthy richness of the tender greens and vegetables! Fresh herbs are filled with healthy compounds and antioxidants! 

 
For protein add chopped grilled barbeque chicken, shrimp or beef!
Goat Cheese and Greek Feta, shaved Parmesan,  grilled corn off the cob, and any kind of beans!

DRESSING

Makes 3/4 cups

INGREDIENTS

2 tablespoons shallots, minced
1 tablespoon Dijon mustard
1/2 teaspoon kosher salt
1/4 cup fresh lemon juice
1 tablespoon rice wine vinegar
2 teaspoons organic honey
1/2 cup Extra Virgin olive oil

INSTRUCTIONS

In a blender add shallot, Dijon mustard, salt, lemon juice, rice wine vinegar, honey, and olive oil.  Blend all the ingredients together until you get a creamy emulsion, about 30 seconds.
Before you dress the salad add ½ teaspoon kosher salt.
Mix in 5 tablespoons of dressing.
Taste and adjust seasoning to taste
Leftover dressing will last in an airtight container for 4 days!

For the Salad:

3 cups wild or baby arugula, coarsely chopped
1 medium zucchini, finely diced
1 medium red and green bell pepper, seeded and diced
1 carrot, peeled and diced
3 celery ribs diced
8 mint leaves chopped coarsely
1 cucumber peeled, seeded and  diced
1  large avocado peeled, pitted and cut into small bite-size pieces!
12 cherry tomatoes sliced in half
I love to chop my veggies and arrange them next to each other to create a visual of all of the beautiful colorful lettuce and vegetables! You can choose any lettuce, vegetable or herb you like. I also like to add fresh fruit like summer strawberries, peaches, plums, and ice-cold watermelon. Cheese is great too, I like Greek Feta or Goat cheese!
Pour 1/3 cup of the salad dressing over the salad, but make sure to let everyone see it first before you mix it. The presentation is mouth water and the aroma of all these garden-fresh lettuce, vegetables and herbs delights all the senses! ENJOY! TO YOUR HEALTH!
