Chocolate Turtle Apple Slices

What’s better than a cold slice of apple dipped in chocolate? These are easy to make and so much fun to do!  Even thought all my children are grown, we still get together to color eggs and cook! We had so much fun decorating our apples. They also make great table decorations! These can be frozen and enjoyed right out of the freezer!

Yields 10 to 12 slices


Prepare the chocolate first before you slice the apples.

4 cups Ghirardelli dark chocolate chips

1 tablespoon coconut oil

2 large unpeeled organic green apples, sliced into ¾-inch slices

12 popsicle sticks

1 cup store-bought caramel sauce

1-1/2 cups chopped pecans, slivered or chopped almonds, peanuts, chopped cashews or walnuts

Line a cookie sheet with parchment paper.

In a double boiler combine the chocolate chips and coconut oil. Melt the chocolate until it’s smooth. Use a wooden spoon to mix.

With a sharp paring knife make a small slit in the bottom of each apple slice large enough to insert the pop sickle stick to hold the apple firmly in place.

Dip the apple slices into the melted chocolate and let the excess drip back into the bowl. Place  the apple slice on the parchment-lined cookie sheet. Drizzle some caramel sauce over the apple slices and sprinkle with our favorite nuts. Refrigerate 1 hour to set the chocolate.

The apples should be eaten the same day. If you don’t eat them first day which is impossible, cover with wrap and store them in the refrigerator! They will keep for 2 days.
